    Artichoke Garbanzo Pasta Salad

    Prep: 15 min, plus chilling time.
    1/2 lb. canned artichoke hearts, chopped
    10 ounces canned garbanzo beans, drained
    2 cups cooked pasta shells or spirals
    1-1/3 cups fresh spinach leaves, chopped
    3/4 large tomato, chopped
    3/4 red bell pepper, chopped
    2 tsp. olive or vegetable oil
    2 tsp. lemon juice
    2 tsp. water
    3/4 tsp. minced garlic
    1/2 tsp. dried basil or oregano
    1/8 tsp. black pepper
    1/8 tsp. salt optional
    2 Tbs. plus 2 tsp. feta cheese, grated

    Mix first 6 ingredients in a large bowl. Blend next 7 ingredients in blender or food processor until smooth. Pour over salad and toss. Cover and chill for at least 2 hours. Top with feta cheese before serving.
