    MOLASSES COCONUT CUSTARD PIE

    2 (9-inch) pie shells, unbaked
    1 c. sugar
    2 T. flour
    2 eggs
    1 c. coconut
    1 c. molasses (use something mild--like Karo dark--we use a brand
    called
    "Turkey" syrup)
    1/2 tsp. baking soda
    1 c. milk
    1/2 c. cream

    In mixing bowl, combine sugar, flour, baking soda; add eggs, coconut,
    molasses, milk & cream. Mix well & set aside. Prepare 2 9" unbaked pie
    shells; prick bottom. Bake at 450 for just 10 min. Reduce heat to 325.
    Remove shell from oven & pour the filling into the crust. Immediately
    return the pie to the oven & continue baking for about 30 min. or until
    firm.
