HAM AND POTATOES AU GRATIN

1/3 cup butter
1/4 cup flour
2-1/2 cups milk
2 cups shredded Cheddar cheese
1/2 tsp. salt
1/4 tsp. white pepper
6 cups sliced potatoes, cooked
1-1/2 cups cubed, cooked ham
1-1/2 cups small broccoli florets, cooked
1/4 cup chopped onion
TOPPING
3 tbsp. butter, melted
1/2 cup cracker crumbs
1/2 cup shredded Cheddar cheese
1 tbsp. dried parsley
1. In a saucepan, melt butter over medium heat. Whisk in flour until smooth. Cook for one minute. Gradually add milk; cook and stir until thickened and bubbly. Add cheese, salt and pepper; stir until cheese melts. Remove from heat.
2. In a buttered 2-quart casserole dish, layer potatoes, ham, broccoli, and onion. Pour cheese over top. Repeat layers two more times, ending with cheese.
3. Combine topping ingredients; sprinkle over casserole.
4. Bake at 350º for 35 to 40 minutes. Yield: 6 servings.
