    HEAT OVEN TO 45O DEGREES. Combine 2 tbs. olive oil, 1 tsp. each hickory seasoning, ground cumin, and salt, 1 tsp. each dried thyme, rosemary and oregano, 1/2 tsp. onion powder. Pierce 5 pounds bone in pork loin, rub with mixture. Place bone side down in pan, let sit. Roast 15 min. REDUCE HEAT TO 35O DEGREES. Roast 1 hour and 15 min. Place on platter and GARNISH WITH parsley and cherry tomatoes. MAKES 6 SERVINGS.
