    Marinated Pork Loin Roast

    2 lb boneless pork loin roast
    2 cloves minced garlic
    1/2 medium onion, chopped
    1/2 cup soy sauce
    1/4 cup dry vermouth
    pepper

    Unwrap pork roast and stab all over vigorously with a fork on both
    sides.

    Mix garlic, onion, soy sauce and vermouth in useful container.
    Drop in pork roast, cover with pepper, and marinate covered
    overnight.
    Turn pork roast in the morning.

    In the evening, remove roast and remove any large bits, leaving
    pepper in place if possible.

    Insert thermometer and place on rack in pan, fat side up. Place
    into a 450F oven, immediately lowering temperature to 350F.

    Roast until done as shown on thermometer. Slice and eat.
