    Ingredients
    1-1/3 cups water
    2/3 cup long-grain rice
    1/2 of a 12-ounce can (3/4 cup) evaporated fat-free milk
    1/3 cup mixed dried fruit bits
    2 teaspoons honey
    1/4 teaspoon pumpkin pie spice or ground cinnamon
    1/8 teaspoon salt
    1 cup chopped, peeled peaches or frozen sliced peaches, thawed and
    chopped
    1/4 cup vanilla fat-free yogurt

    Directions
    1. In a medium saucepan stir together water and uncooked rice. Bring to
    boiling; reduce heat. Simmer, covered, for 15 to 20 minutes or until
    rice is tender.

    2. Stir evaporated milk, fruit bits, honey, pumpkin pie spice or
    cinnamon, and salt into cooked rice. Bring just to boiling; reduce
    heat.
    Simmer, uncovered, over medium-low heat about 5 minutes or until
    mixture
    is thick and creamy, stirring frequently. Serve pudding warm with
    peaches and yogurt. Makes 4 servings.
