    CHEESY PORTOBELLO (MUSHROOM) SALAD W/GAR

    Aunt Saunny

    Italian marinade: 1/4 cup
    Parsley: 1/4 cup
    Olive oil: 3 tbs.
    Garlic: 1 clove
    Red Pepper Flakes: 1/4 tsp.
    Portobello Mushrooms: 4
    Red Pepper: 1 quartered
    Salt and Pepper: 1/4 tsp. each
    Asiago Cheese: 1/2 cup shredded
    Baby Greens: 6 cups

    HEAT BROILER. In blender, puree first 5 ingredients. Toss mushrooms and peppers with 1/4 cup mixture, season with salt and pepper. Broil 8 min. turning once. Remove peppers. Top mushrooms with cheese, broil 2 min. Slice. ARRANGE GREENS ON 4 PLATES. Drizzle with remaining vinaigrette mixture. Top with mushrooms and peppers.
    GARNISH WITH CHOPPED THYME. Makes 4 servings.*
