    MAKE AHEAD WINTER SALAD WITH DRESSING

    "Nana" to Bubbe & Alex

    3 tbs. red wine vinegar
    1 1/2 tbs. Dijon mustard
    1 tsp. each salt and ground pepper
    1/2 tsp. sugar
    1/3 cup olive oil
    5 strips bacon
    1 pound white mushrooms, thinly sliced
    8 oz snow peas, cut in thin strips
    1 Belgian endive, cut in thin strips
    1 red onion, cut in thin slices
    1 bunch red radishes, thinly sliced
    2 heads lettuce, torn bite size
    1 bunch watercress, large sprigs halved

    VINAIGRETTE: In bowl, whisk together first 5 ingredients to combine. \Whisk in oil until thickened. Cook bacon in skillet 5 min. or until crisp. Drain on paper towels. Discard all but 1 tbs. fat from skillet. Add mushrooms
    and saute 5 min. or until golden brown. Crumble bacon into mushrooms. Prepare remaining ingredients. TO SERVE: Put lettuce and watercress in serving bowl. Add cut veggies, bacon, and mushrooms. Whisk vinaigrette to reblend. Drizzle
    over salad. Toss gently to mix. MAKES 12 SERVINGS.*
