Turkey Breast Sandwich

4 turkey breast fillets, about 1/4 lb. each
1/2 tsp. pepper
nonstick cooking spray
8 slices whole wheat bread
1/2 cup barbecue sauce
1/2 cup sliced sweet pickles
4 Romaine lettuce leaves
1 tomato, sliced
Season turkey with pepper. Place turkey fillets between two sheets of
wax paper and pound lightly with a mallet or other heavy flat object
until very thin. Coat a heavy nonstick skillet with cooking spray and
place over medium high heat. Sauté turkey 2-3 minutes per side, until
lightly browned and cooked throughout. Serve fillets on bread with barbecue
sauce, pickles, lettuce and tomato
