    Bunkhouse Snatchen Milk Gravy

    2 tablespoons meat drippings, bacon drippings, or lard
    1 pound bulk saysage
    3 tablespoons unbleached all-purpose flour
    1 (12 ounce) can evaporated milk plus 1/2 can whole milk
    Salt to taste

    In a large skillet, heat the drippings over medium heat. Fry crumbled sausage until browned and drain all but three tablespoons of drippings Heat back to fry stage and SLOWLY Stir in the flour and cook for 2 to 3 minutes,
    until the flour turns golden. Add the milk and half a can of water. Cook, stirring, until the gravy is smooth and thickened. Season to taste with salt and pepper and serve over biscuits.
