    Aunt Saunny

    Makes 3 to 4 servings
    This is a colorful vegetable which has a zesty taste.

    1/4 cup water
    1/4 cup sugar
    1/3 cup vinegar
    1 (16 ounce) can sliced beets, drained

    Pour water, sugar and vinegar into 2-quart saucepan. Heat over high heat until sugar is dissolved, about 5 minutes, stirring occasionally. Add beets to saucepan. Stir well. Remove from heat and let cool for 15 minutes. Pour into glass or plastic container and refrigerate until chilled thoroughly.

    To serve, drain beets and place in serving dish.
    1 stick or tsp of ground cinnamon may also be added.
    When stored in refrigerator in a tightly covered glass container, Pickled Beets will keep indefinitely.
    VARIATIONS: Use 5 times the recipe to make 1 gallon of pickled beets.
