Makes 4 to 6 servings
A recipe with color and flavor - designed for company. It is unusual and delicious. This dish is better if left overnight and then cooked.
1-1/2 to 2 pounds red (purple) cabbage, coarsely shredded
1 pound apples, peeled and sliced
1 cup uncooked long-grain white rice
2 to 4 tablespoons dark brown sugar
1/4 teaspoon salt
1/4 teaspoon pepper
2 to 3 cups water
1/2 cup vinegar
2 tablespoons margarine
Preheat oven to 250 degrees. Lightly grease 2-quart casserole.
Remove coarse outer leaves of cabbage before shredding. Place ingredients in prepared casserole in the following layers: cabbage, apples, rice, sugar, salt and pepper.
Repeat the layers until all ingredients are used, ending with cabbage and apples. Mix water, vinegar and margarine. Pour over the casserole.
Cover and bake 3 hours. Serve hot.
