    Sweet and Sour Red Cabbage

    Prep: 10 min, Cook: 50 min.
    1 red cabbage, shredded
    1 large cooking apple, peeled, cored and chopped
    1 ounce butter
    3 Tbs. wine vinegar
    2 Tbs. water
    1 ounce sugar
    salt and pepper
    1 Tbs. apricot jam or redcurrant jelly

    Place red cabbage, apple, and butter in a saucepan. Cover and cook over a low heat, stirring occasionally, until butter has melted. Add vinegar, water, sugar, and salt and pepper to taste. Cover and simmer for 30 to 40 minutes. Stir in the jam or jelly, and cook for 10 more minutes. Transfer to a serving dish and serve hot or cold.
