"Nana" to Bubbe & Alex
1 (16 oz.) White whole kernel corn, drained
1 (16 oz) Yellow whole kernel corn drained
1 large Mexi Corn drained
1 small jar pimientoes
1 (5 1/3 oz.) can evaporated milk
1 1/2 c. shredded Swiss/cheddar cheese or your favorite--Pizza cheese
4/blend is good also
2 large eggs beaten well as if for scrambled eggs.
2 tbsp. finely chopped onions
1 c. soft bread crumbs
2 tbsp. butter, melted
1 can french gried onions optional
Red or Green Bell/sweet pepper rings optional
Combine corn, evaporated milk,pimientoes, 3/4 cup of shredded cheese, eggs, chopped onion and dash of pepper. Place in a prepared baking dish,sprayed well with baking spray which will make cleanup so much easier . . Toss bread crumbs with the melted butter and the remaining cheese. Sprinkle over corn mixture.Bake at 350 degrees for 25-30 minute. Garnish with green pepper rings and french fried onions,if desired.
