Stuffed Green Beans

1 pound of fresh green beans (a large bag of the whole frozen green
beans work just as well) and/or
1 large can of green beans
1 tablespoon butter/margarine/olive oil/lard....(your preference and
choice)
1/4 cup chopped/minced onions (your preference in thickness/mass)
1-2 cloves minced garlic
1/4 teaspoon rosemary
1/4 teaspoon freshly ground pepper
1 teaspoon salt
1 lemon (or lime....again your choice and preference)
1/2 cup freshly grated parmeson/reggiono/asiago cheese (your choice)
1 cup stale/dried bread crumbs
If using fresh beans....parboil quickly for approximately two minutes
in boiling water...then immediately "shock" them by placing them in
ice-water...if using canned...well..just open the can....what other
can I say....
In a separate skillet...Saute the onions and garlic in the
oil/butter/etc...of choice until soft and opaque but NOT
overdone/carmelized...
Add the juice of choice as well as seasonings...mix lightly...
Incorporate the beans with the cooked ingredients and place into an
appropriate sized-casserole dish/container...
Place bread crumbs on top...spreading evenly (and if you choose to as
I do...I always add additional butter over the top...then sprinkle
with paprika and/or cayenne pepper..depending on my "mood")
Place in oven and bake for approximately 15-20 minutes or until
topping is golden brown....
