Tempura of green beans with lemon

whites of 10 eggs
3 1/2 cups all-purpose flour
5 cups cold soda water
3 tablespoons kosher salt
2 pounds blue lake green beans
Whisk egg whites until thick and frothy. Whip in the flour to
incorporate. Add the soda water and salt. Mix thoroughly. Fry beans
in batches by dipping in batter, dropping individually into 350-
degree oil and stirring so as not to stick together. Repeat as
necessary. Serve with fresh lemon wedges.
