Honey Glazed Carrots and Parsnips

1/2 lb. carrots, thinly sliced
1/2 lb. parsnip, peeled and thinly sliced
1/4 cup chopped fresh parsley
2 tbsp honey
Additional fresh parsley (optional)
Steam carrots and parsnips over simmering water in large saucepan 3-4 minutes or until crisp-tender. Rinse under cold running water; drain. Combine carrots, parsnips, parsley and honey in same saucepan. Cook over med. heat just until heated through. Garnish with additional parsley, if desired. Serve immediately.
