    Aunt Saunny

    Boil (3 pounds red skinned potatoes), quartered, (1/2 tsp. salt) and water to cover, reduce heat. Cover and simmer 20 min. Drain. Mash potatoes and (3/4 cup buttermilk), warmed and (3 tbs. thyme) and (1/2 tsp. each salt and pepper).
    Place in serving bowl and GARNISH WITH chopped parsley. Makes 6 servings.*
