Squash Fritters

"Nana" to Bubbe & Alex
2 cups yellow crook necked squash Diced
1 cup flour
1 jar pimientos
1/8 cup buttermilk
1/2 cup diced onions
3 eggs
1/4 cup grated Parmesan cheese
Salt and pepper to taste.
Combine all ingredients. Drop by teaspoonful into 2" of hot vegetable oil. Fry until lightly browned. Drain on paper towel.
