    List of Ingredients


    • 4 tablespoons peanut oil
    • 2 green peppers, cut in (1 to 2) 1/4 inch strips
    • 2 carrots, finely shred (1 to 4 )1/4 inch match-stick, size strips (sliced stack slices, slice through stack)
    • 2 scallion, quartered length-then into 3 inch long, strips
    • 2 pounds pork, loin cut into fine 2 strips -- 1/8 inch by 2 to 6 inches long
    • 4 tablespoons dry sherry
    • 4 tablespoons hoisin sauce
    • 2 tablespoons black bean sauce
    • 2 tablespoons vinegar
    • 2 teaspoons sugar
    • 1/2 t chili paste (1/4 to 1/2)


    Instructions


    1. Heat oil in wok and stir-fry the green peppers, carrots, and scallion for 1-2 minutes. Push aside.
    2. Stir-fry the slivers of meat for 1 to 2 minutes and recombine with the vegetables. Add the remaining ingredients
    3. Stir and heat throughly. Serve at once with boiled rice. Serves 8, I usually double the sauce ingredients because it doesn't seem to be quite enough.
