    Seadog's Arroz Con Pollo(Chicken & Rice)

    Recipe Introduction


    Arroz con Pollo (Chicken and yellow Rice.) One of Puerto Rico's everyday dishes and best loved.Puerto Rican's LOVE to eat and every meal is a special meal to them, and this is one of them.

    Servings: 8


    List of Ingredients


    • 2/3 cups white rice
    • 6 cans (303) whole tomatoes, fine chopped or
    • 4 tablespoons sofrito
    • 4 chickens, whole, cut into tiny pieces
    • 8 tablespoons olive oil
    • 2 tablespoons alcaparrado or salad olives
    • 2 tablespoons chicken base
    • salt to taste
    • 2 packets Sason seasoning
    • 3 cups ham or salt pork
    • Sofrito:
    • 2/3 cups peanut oil
    • 7/8 cups green bell pepper, medium dice, seeded
    • 7/8 cups mild green chiles, medium dice, seeded
    • 2 3/4 cups onion, medium dice
    • 1/3 cup garlic, minced
    • 7 1/2 sprigs cilantro
    • 7/8 teaspoon oregano
    • 7/8 cup cooked ham, medium dice
    • 1/4 teaspoon powdered saffron, or ground annato seed


    Instructions


    1. Sofrito: COMBINE ONE-THIRD OF THE PEANUT OIL, BELL PEPPERS, CHILES, ONIONS, GARLIC, CILANTRO, AND OREGANO IN A FOOD PROCESSOR. PROCESS TO FINELY CHOP.
      ADD THE HAM, PULSE TO MIX WELL .
      HEAT REMAINING PEANUT OIL IN A LARGE SKILLET, OVER A MEDIUM FLAME SPRINKLE WITH POWDERED SAFFRON OR ANNATO SEEDS.
      ADD THE PUREED MIXTURE-MIX WELL. HEAT TO A BOIL, REDUCE HEAT, AND SIMMER FOR 12-15 MINUTES, STIRRING OFTEN.
      REMOVE FROM HEAT, COOL. COVER AND CHILL UNTIL NEEDED.



    2. Begin by heating oil and frying the sofrito, tomato puree, and olives on a low fire. As they brown, add chicken broth, the sason seasoning and salt. Your sauce should thicken as it cooks, add a little water as it evaporates. cooking for 10 minutes then, add more water, enough to absorb the chicken.

    3. Let the sauce boil very gently as you add the chicken. Cook this mixture gently for 10 more minutes. Add water gradually so there's not to much evaporation.

    4. Then heat your fire to boiling. While it's getting hot, wash the rice and drain. Then pour the rice into boiling sauce.

    5. As the liquid begins a steady boil, the rice will begin to absorb the water. Lower the heat gradually as it does. When most is absorbed, (5 minutes or so) cover pot and let steam. Lower the heat and simmer 15 minutes.

    6. Stir carefully, the bottom will have formed a crispy layer, don't stir that in, stir the soft rice once or twice. Let simmer for 30 more minutes or until perfect. Serve



    Final Comments


    Notes: Alcaparrado are spanish olives and capers mixture. Sofrito seasoning is a Central American thick seasoning sauce made with salt pork, annatto oil, onions, garlic, green peppers, and tomatoes cooked in oil and flavored with cilantro and oregano. There are Spanish and Italian versions, differing slightly in ingredients. Sofrito is used to flavor soups, sauces, and meat dishes; also spelled "soffrito."
