    A pleasant way to serve turkey breast with a Jamaican touch !

    List of Ingredients


    • 3 3/4 pounds skinless turkey breast
    • 1/2 cup soy sauce
    • 1/2 cup dry sherry
    • 1/4 cup apricot jam
    • 1/3 tablespoon ginger
    • 1/2 pint chicken broth
    • 1/2 cup brown sugar
    • 1/4 cup vegetable oil
    • 1/16 cup lemon juice
    • 1 7/8 cloves garlic, chopped
    • 1 teaspoon jerk seasoning
    • Jerk Seasoning:
    • 1 tablespoon onion, minced
    • 1 1/2 teaspoons onion powder
    • 2 teaspoons crushed thyme
    • 1 teaspoon salt
    • 1 teaspoon ground allspice
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground cinnamon
    • 1 teaspoon sugar
    • 1 teaspoon black pepper
    • 1/2 teaspoon cayenne


    Instructions


    1. Jerk Seasoning:Mix together dried minced onion, onion powder, crushed thyme, salt, ground allspice, ground nutmeg, ground cinnamon, sugar, black pepper, and cayenne. Makes enough to coat one whole pork tenderloin.

    2. Carefully bone turkey breast. Remove fillet from underside of breast by detaching the feather-shaped piece of boneless meat beside the breast bone. Cut remaining breast meat into 3 equal portions.
    3. In a plastic bag, combine broth, soy sauce, sugar, sherry, oil, apricot jam, lemon juice, ginger,jerk seasoning and garlic; mix well to dissolve sugar. Prop bag in a bowl; add turkey, submerge in marinade. Marinade 4 to 6 hours or overnight.
    4. Remove meat from marinade, reserving marinade. Broil or barbeque turkey 12 to 15 minutes, turning and brushing meat with marinade. Serve with rice and garnish with sliced fruit.
