    Recipe Introduction


    This recipe gives the distinctive flavor of Jamaica with
    nutmeg, allspice, cloves, cinnamon and cayenne pepper.

    • Jerk Seasoning:
    • 1 tablespoon onion, minced
    • 1 1/2 teaspoons onion powder
    • 2 teaspoons crushed thyme
    • 1 teaspoon salt
    • 1 teaspoon ground allspice
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground cinnamon
    • 1 teaspoon sugar
    • 1 teaspoon black pepper
    • 1/2 teaspoon cayenne
    • Jerk Snapper Ingred.
    • 4 tablespoons Dry Jerk Seasoning
    • dash hot pepper sauce
    • 8 tablespoons olive oil or butter or combination
    • 8 10 ounce snapper fillets


    Instructions


    1. Jerk Seasoning: Mix together dried minced onion, onion powder, crushed thyme, salt, ground allspice, ground nutmeg, ground cinnamon, sugar, black pepper, and cayenne.

    2. Broiled Jerk Snapper :Blend the jerk seasoning, pepper sauce, and oil. Cover the fish with the mix, being careful to coat the fillet all over.

    3. Place in a pan and broil until the fish flakes when tested with a fork.
