    Churrasco W/ Hot Pepper & Lime Sauce

    Source of Recipe

    Recipe from Global Grilling

    Recipe Introduction

    Barbecuing is a way of life in Brazil. Churrasco refers to "meat roast" in Brazil; large cuts of beef and chicken are barbecued over an open pit. When the meat is done, it is carved off and plated and the remaining meat is returned to the fire. There is always a molho at the table, a lime and pepper sauce similar to salsa. This spirit of churrasco has been adapted to the American grill.

    List of Ingredients

    • for the molho;
    • 1 medium onion, finely chopped.
    • 1-2 chili peppers, seeded and minced.
    • 1/2 cup lime juice
    • 2 tablespoons olive oil
    • 2 tablespoons fresh minced cilantro
    • 1/2 teaspoon salt
    • 4 (10-12 oz.) boneless N.Y. strip or prime rib steaks, well trimmed

    Instructions

    1. Combine all of the ingredients, except the beef, in a mixing bowl and chill for one hour.
    2. Preheat the grill until the coals are gray to white.
    3. When the fire is ready, place the steaks on the oiled grill. Cook until the meat reaches the desired degree of doneness.
    4. Transfer the steaks to plates and pass the sauce around the table. Serve with rice and beans.
