    Coconut Marinated Fish

    List of Ingredients


    • 3 pounds tuna fillet
    • 1 cup coconut milk
    • 1 cup fresh lime juice, strained
    • 1 cup pineapple, crushed with juice
    • 3 cups tomato concasse
    • 1 cup scallions, minced
    • 1/2 cup red bell pepper, seeded, large dice
    • 1 tablespoon kosher salt
    • 1/4 cup parsley, minced


    Instructions


    1. 1. CUT FISH INTO 1/2-INCH CUBES

    2. 2. COMBINE WITH REMAINING INGREDIENTS-MIX WELL

    3. 3. COVER AND CHILL FOR 2-3 HOURS

    4. 4. REMOVE FROM REFRIGERATOR

    5. 5. LET STAND FOR 15 MINUTES BEFORE SERVING

    6. 6. ARRANGE IN LETTUCE CUPS AND SERVE SLIGHTLY CHILLED
