    Recipe Introduction

I have often used Betty Crocker recipes for my base recipe.
The recipes are simple yet they have a great flavor. This one I didn,t want to modify because of it'simplistic and island type flavor.Sometimes I don,t even have to modify the dish at all. Any firm fish, such as tuna or halibut, can be used in this recipe.

    List of Ingredients

1 7/8 pounds swordfish steaks, 3/4 to 1 inch thick
    1/3 cup lime juice
2 1/2 tablespoons olive or vegetable oil
1 1/4 teaspoons finely chopped gingerroot
    1/3 teaspoon salt
    dash ground red pepper (cayenne)
    1 1/4 cloves garlic, crushed
    Lime wedges, if desired

    Recipe

    1. If fish steaks are large, cut into 6 serving pieces
    2. Mix remaining ingredients except lime wedges in shallow
nonmetal dish or heavy-duty resealable plastic bag.
    3. Add fish, turning to coat with marinade.
    4. Cover dish or seal bag and refrigerate at least 30
minutes but no longer than 2 hours.
    5. Heat coals or gas grill. Remove fish from marinade;
    reserve marinade.
    6. Cover and grill fish 4 to 6 inches from medium heat 15
to 20 minutes, brushing 2 or 3 times with marinade and
turning once, until fish flakes easily with fork.
    7. Discard any remaining marinade. Serve fish with lime
    wedges.
