Chicken a la King with a Kick

Recipe Introduction
A good make-ahead meal, since the flavor improves with a little time.
List of Ingredients
- 3 - 4 tbsp. butter (or roast chicken drippings is even better!)
- 1/2 onion, diced
- 1/2 green pepper, diced
- 4 oz. fresh mushrooms, sliced
- 1 small jar pimentos, drained
- 1/4 cup flour
- 1 can evaporated milk (not the sweetened condensed kind)
- 1 healthy "glug" dry sherry (mebbe 2-3 tbsp?)
- 1½ tsp. chicken bouillon granules
- salt to taste (easy on the salt, since the bouillon is salty)
- black pepper to taste
- red pepper to taste (not cayenne)
- 1½ - 2 cups diced cooked chicken
Instructions
- Sauté onion, pepper & mushrooms in butter/drippings for a coupla minutes. Add pimentoes.
- Blend flour into the canned milk until smooth; add to sautéed vegetables; add sherry, bouillon & seasonings, cook & stir until it begins to thicken.
- Add chicken & warm to serving temperature.
- Serve over rice or toast. (we had it with our usual combo of brown & wild rice & it was delicious)
Final Comments
You could avoid making the sauce from scratch - just delete the flour & milk and use a can of condensed cream of mushroom soup instead. But I use it so much that half the stuff we eat tastes like mushroom soup! Mebbe that's why this was such a nice change, and the red pepper really perked it up!
