Corned Beef Hash

- 2 cups finely diced potatoes
- 1/2 cup finely chopped onion
- 2 cups cooked diced corned beef
- 1/4 cup milk
- 1/2 tsp. salt
- 1 tsp. worcestershire sauce
- few drops tabasco sauce (optional)
Instructions
- Brown potatoes in a little butter in a large skillet.
- Add onion & cook until tender, then add corned beef and toss together.
- Add milk, salt & worcestershire/tabasco, mix lightly.
- Spread evenly over bottom of skillet and cook over medium heat until bottom is golden brown & crusty.
Final Comments
I've also added chopped green pepper, chopped celery, minced garlic, even sliced mushrooms to this hash.
Instead of plain milk, a white sauce can be used for extra richness: (melt 1 tbsp. butter, blend in 1 tbsp. flour, dash of salt & cook 1-2 minutes. Then blend in 1 cup milk until smooth & cook, stirring constantly, until thickened).
