Sausage & Squash Skillet

List of Ingredients
- 1 lb. Jimmy Dean sage sausage, cooked & crumbled
- 2 zucchini, coarsely chopped (these are small squash, about 7"-8" long)
- 2 crookneck squash, coarsely chopped (same with these - about 7"-8" long)
- 1 medium onion, diced
- 1 can condensed cream of mushroom soup (or your choice of "cream of" soup)
- 1/2 cup light mayonnaise
- 1 tsp. rubbed sage
- 1 or 2 tsp. hot sauce (tabasco, cayenne, whatever)
- 1 small jar pimentos for color (optional)
- 1 cup buttered breadcrumbs
- 1/2 cup fresh grated parmesan
Instructions
- Combine sausage, squash & onion (precook the squash & onion if you wish; we like ours tender/crisp, so I just start with 'em raw)
- Blend together soup, mayonnaise, sage, hot sauce & pimento; add to sausage/squash mix and spoon into a baking dish.
- Combine breadcrumbs with parmesan; sprinkle evenly over all.
Bake at 350° about 20-25 minutes or until topping begins to brown lightly.
