    List of Ingredients


    • 1 lb. Jimmy Dean sage sausage, cooked & crumbled
    • 2 zucchini, coarsely chopped (these are small squash, about 7"-8" long)
    • 2 crookneck squash, coarsely chopped (same with these - about 7"-8" long)
    • 1 medium onion, diced
    • 1 can condensed cream of mushroom soup (or your choice of "cream of" soup)
    • 1/2 cup light mayonnaise
    • 1 tsp. rubbed sage
    • 1 or 2 tsp. hot sauce (tabasco, cayenne, whatever)
    • 1 small jar pimentos for color (optional)
    • 1 cup buttered breadcrumbs
    • 1/2 cup fresh grated parmesan


    Instructions


    1. Combine sausage, squash & onion (precook the squash & onion if you wish; we like ours tender/crisp, so I just start with 'em raw)
    2. Blend together soup, mayonnaise, sage, hot sauce & pimento; add to sausage/squash mix and spoon into a baking dish.
    3. Combine breadcrumbs with parmesan; sprinkle evenly over all.

    4. Bake at 350° about 20-25 minutes or until topping begins to brown lightly.
