    Spaghetti with Rubies (i.e., beets)

    long forgotten newspaper or magazine clipping


    List of Ingredients


    • 2 cloves minced garlic
    • pinch crushed red pepper
    • olive oil as needed
    • salt to taste
    • 2-3 cups beets, cooked, peeled & diced
    • spaghetti or linguini, cooked & drained


    Instructions


    1. Sauté garlic and red pepper in olive oil until sizzling and fragrant.

    2. Add beets and toss until coated.

    3. Add pasta and some of the cooking water; toss until coated and simmer until evenly colored, stirring constantly - about 2 minutes.

    4. Serve immediately.



    Final Comments


    This simple dish is simply delicious - a good side dish with schnitzel or a breaded chicken filet
