    Brown Rice Pilaf

    List of Ingredients


    • 2 tbsp. butter or margarine
    • 1 cup brown rice
    • 1 rib celery, diced
    • 1 cup sliced fresh mushrooms
    • 2 cups chicken broth
    • dash of curry powder (optional)
    • 1 bunch scallions, chopped (green tops too)
    • 1/3 cup toasted sliced or slivered almonds


    Instructions


    1. Melt butter in large skillet; saute rice, celery & mushrooms for several minutes, stirring frequently

    2. Add broth and curry powder; bring to boiling

    3. Cover, reduce heat and steam for about 45 minutes until all liquid is absorbed

    4. Add scallions & almonds; toss lightly & serve
