    Cuban Black Beans

    List of Ingredients


    • 1 lb. black beans
    • seasoned salt as needed
    • black pepper as needed
    • 1 - 2 tbsp. olive oil
    • 1 red bell pepper, chopped
    • 1 yellow onion, chopped
    • 2 - 3 jalapenos, finely chopped
    • 2-3 cloves garlic, minced
    • ½ - 1 tsp. oregano


    Instructions


    1. Wash beans and soak overnight.

    2. Drain and rinse the beans; place in large kettle with lots of water (1½ to 2 quarts) and bring to boiling. Add seasoned salt and black pepper as desired. Reduce heat to simmer.

    3. Heat olive oil in skillet and saute pepper, onion, jalapenos, garlic and oregano until tender and the garlic flavor seeps through; add to black beans and simmer 3-4 hours.
