    List of Ingredients


    • 2 - 4 strips diced bacon
    • 1/2 cup chopped onion
    • 1/2 cup chopped green pepper
    • 1 clove minced garlic
    • 1 pint canned tomatoes
    • 1 cup water
    • 1/2 tsp. salt
    • 1/8 tsp. black pepper
    • 1 bay leaf
    • 1/2 cup uncooked rice (converted rice is good)
    • cayenne to taste, for extra spiciness (optional)


    Instructions


    1. Sauté bacon in large skillet until about half cooked; add onion, green pepper and garlic - cook until tender.
    2. Add tomatoes, water, salt, pepper & bay leaves and bring to a boil. Add rice, stir, cover and reduce heat.
    3. Cook about 30 minutes or until rice is tender and water is fully absorbed. Remove bay leaves and serve hot.
