    Pork Chops with Mushrooms & Brown Rice

    List of Ingredients


    • 1-1/2 to 2 cups cooked brown rice
    • 3 - 4 tbsp. butter or margarine
    • 1/4 cup minced fresh onion
    • 1/4 cup minced green pepper
    • 8 oz. fresh mushrooms, chopped
    • 2 - 3 tbsp. flour
    • salt & pepper to taste
    • cajun seasoning to taste
    • 1 can evaporated milk
    • 2 or 3 boneless pork chops
    • 1/4 to 1/2 cup grated fresh parmesan


    Instructions


    1. Saute onion, green pepper & mushrooms in butter until tender.

    2. Add seasonings & flour; blend together and cook 1 or 2 minutes before adding milk. Blend until smooth & cook until thickened. Add a little water if too thick - (the rice will absorb quite a bit of moisture, so it can be a little soupy)

    3. Add sauce to rice and mix gently.

    4. Layer in a shallow baking pan with grilled pork chops, so just the edge of the chops shows above the rice mixture.

    5. Sprinkle with grated parmesan.

    6. Bake at 350F about 30 minutes, or until heated through and the parmesan browns nice & golden.

    7. Serve immediately.
