    List of Ingredients


    • 1 4-to-6 pound whole chicken
    • 1 small onion, coarsely chopped
    • 1 or 2 ribs celery, coarsely chopped
    • salt & pepper to taste
    • butter or margarine as needed


    Instructions


    1. Wash chicken inside & out; pat dry with paper towels
    2. Season chicken inside and out with salt & pepper
    3. Place chopped onion & celery in cavity
    4. Lightly coat outside of bird with butter or margarine
    5. Place chicken in pre-heated 400F oven for 15 minutes. Reduce heat to 350F and roast 20 minutes per pound, until juices run clear.
    6. If too much browning occurs during roasting, tent aluminum foil over the bird.
    7. When fully cooked, allow to set 10 minutes before carving.
