List of Ingredients
- 1 4-to-6 pound whole chicken
- 1 small onion, coarsely chopped
- 1 or 2 ribs celery, coarsely chopped
- salt & pepper to taste
- butter or margarine as needed
Instructions
- Wash chicken inside & out; pat dry with paper towels
- Season chicken inside and out with salt & pepper
- Place chopped onion & celery in cavity
- Lightly coat outside of bird with butter or margarine
- Place chicken in pre-heated 400F oven for 15 minutes. Reduce heat to 350F and roast 20 minutes per pound, until juices run clear.
- If too much browning occurs during roasting, tent aluminum foil over the bird.
- When fully cooked, allow to set 10 minutes before carving.
