    Aunt Jean's Eggplant

    List of Ingredients


    • 2 eggs, beaten
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1-1/2 cups plain breadcrumbs
    • 3 tablespoons freshly grated parmesan cheese
    • 1 cup olive oil
    • 1 medium-sized eggplant (peeled and sliced into 1/4 inch thick rounds, should yield 12 slices)


    Instructions


    1. Place beaten eggs into a bowl; add salt and ground black pepper.
    2. In another bowl, combine breadcrumbs and fresh grated parmesan cheese.
    3. Dip slices of eggplant into the eggs and then into the breadcrumbs, one at a time.
    4. Place olive oil in a 12 inch frying pan over medium heat.
    5. When oil is hot (test oil by putting one drop of water into the pan. If the water jumps up, the oil is ready), fry eggplant slices for three minutes on each side or until golden brown.
    6. Place eggplant on paper towels to drain the excess oil.
    7. (Serves 4-6)
