    Fried Green Tomatoes

    traditional Southern dish


    List of Ingredients


    • 1 large egg, beaten with a little water
    • dash of salt
    • splash or two of tabasco
    • 3 or 4 green tomatoes, sliced no more than 1/4 inch thick
    • couple handfuls of soft bread crumbs
    • one handful yellow cornmeal
    • oil, butter, bacon drippings or combination for frying


    Instructions


    1. Add salt & tabasco to beaten egg.

    2. Combine crumbs and cornmeal in a shallow dish.

    3. Pat tomato slices dry with paper towels and then dip into egg, dredge in crumbs/cornmeal.

    4. Heat oil or drippings in skillet.

    5. Saute tomatoes until breading is crispy and deep golden brown, turning once.

    6. Drain on paper towels.

    7. To make gravy from drippings, blend in 2 tbsp. flour until smooth and cook 2 - 3 minutes. Add 2 cups milk, continue cooking until it thickens, stirring constantly. Season with salt & pepper to taste. Ladle over tomatoes if desired.
