As some of you may remember, last year I had put out a request for a clone recipe for a Raspberry Cobbler Martini that I had at the Belagio Hotel in Vegas. Well I was in Vegas last weekend the the drinkserver actually got the recipe for me. So Here it is... one of the best drinks I have ever had.~NightAngel CK
1 1/2 oz Stoli Vanilla Vodka
1/2 oz Chambord
1 oz sweet and sour
splash of pinapple syrup (not juice)
Shake and serve in a martini glass rimmed with cinnamon and sugar, float a cinnimon stick.
You can buy bottled pineapple syrup, but it’s easy to make at home.
Pineapple Syrup
4 cups cane sugar
2 cups water
1 small pineapple
In a bowl or 2-quart jar, combine sugar with water and stir. Skin and cube a small pineapple and add the fruit to the sugar mixture. Let stand for 24 hours. Remove the pineapple cubes, lightly pressing them to squeeze some juice into the mixture. Stir to dissolve any residual sugar and pour the syrup through a tea strainer or cheesecloth-lined funnel into a 1.5-liter bottle. Add a small dash of spirits (any distillate of at least 80-proof) as a preservative. Keep refrigerated for up to a month.
