    Although this recipe comes from the late Virgina Owens, a St. James parishioner, Virgina's Butter Beans are made by everybody in town, and we can see why. The crumbled bacon is the crowning glory.

    List of Ingredients




    6 sliced bacon, fried and crumbled
    1/4 to 3/4 cup minced green onions (or yellow onions, if you please)
    1/3 cup minced celery
    1/3 cup minced bell pepper
    2 large minced garlic cloves
    2 TBSP flour
    2 Cups drained canned tomatoes
    salt and pepper to taste
    2 TBSP brown sugar
    2 (10 oz) boxes frozen butter beans, cooked and drained.

    Recipe



    Preheat oven to 350F.

    Fry the bacon , remove the pan and crumble. In the same pan Saute the minced vegetables in the bacon grease. Add the flour, tomatoes, salt, pepper and brown sugar. Add the cooked and drained butter beans. Adjust the seasoning, pour into a casserole, adn top with crumbled bacon. Bake until bubbly.

    Serves 8-10 this freezes well.
