Sausage stuffed Apples

Recipe Introduction
Serve on a big platter surrounded by dallops of chunky applesauce sprinkled with walnuts and cinnamon
List of Ingredients
4 medium red apples
1 tsp lemon juice
5 little sausage links, browned, drained and crumbled
1 cup cooked brown rice
1 TBSP onion, diced
1 tsp celery, diced
3oz sharp cheddar cheese cubed
1 TBSP walnuts, chopped
1 TBSP raisins
2 egg whites, lightly beaten
1/4 tsp allspice
salt and pepper to taste
Recipe
Core apples, leaving the bottoms intact. Hollow out the center of each apple. leaving the sides thick enough to hold together when cooked.
Peel each apple halfway down and rub with lemon juice. Set aside.
Mix all remaining ingredients together and stuff apples firmly with mixture.
(if the apples wont stand up, trim the bottom flat)
bake in a 375 degree oven for 15 minutes or until golden brown.
