Scenic Salisbury Steak

1-1/2 lb. lean ground beef
1-1/2 T. finely chopped onion
1/4 cup bread crumbs
1/4 tsp.pepper
1 egg
2 T. milk
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/2 soup can water
1/4 cup mayonnaise
1 small onion, sliced
1/4 cup chopped green bell pepper
10 mushrooms, sliced
2 tomatoes, chopped
1 large carrot, shredded
Preparation -
Mix together the ground beef, chopped onion, bread crumbs, pepper, egg, and milk. Form the mixture into patties, then brown on both sides in a skillet. Whisk together the soup, mayonnaise, and water until smooth. Pour the soup mixture over the patties to coat them well. Place the onion, green pepper, mushrooms, and tomatoes on top. Bake in a preheated oven at 350º for 30 minutes. Turn the patties over. Cover with the vegetables and sauce and bake for 30 more minutes.
