    We know thi must have been intended as a funeral dish: The orginal recipe called for unmolding the mousse and surrounding it with stuffed eggs--and, as everybody knows stuffed eggs , like aspic are a signature dish of death. We like to serve ham mousse with avocado mayonnaise .

    List of Ingredients




    3/4 Cup cold water
    2 envelopes unflavored gelatin
    1 1/2 cups homeade mayonnaise
    2 cups chopped ham (about a pound)
    3/4 cup celery
    1/2 cup chopped green pepper
    2 1/2 TBSP grated onion
    1/2 tsp white onion
    1 TBSP fresh lemon juice
    1/2 pint whipping cream, whipped

    Recipe



    In a saucepan, add the unflavored gelatin to the cold water. Heat on low until the gelatin has dissolved. Gradually add this mixture to the mayonnaise, incorporating well. Chill in the refrigerator until slightly thickened. Add the ham, celery, green pepper, grated onion, white pepper, and lemon juice. Mix gently. Fold in the whipped cream. Pour into a quart mold and chill until firm.

    Unmold on lettuce leaves and serve with avocado mayonnaise .

    Serves 10 .
