    3 Tblsp. extra virgin olive oil
    1 Tblsp. all-purpose flour
    1/4 cup chili powder
    2 cups stock chicken (may use beef stock or vegetable stock)
    2 (6 oz.) cans tomato paste
    1 tsp. dried oregano
    1 tsp. cumin
    Salt
    Cayenne pepper


    In a saucepan, heat olive oil and add flour; stir until smooth (about 1 minute). Add the chili powder and mix well. Quickly add the other ingredients and mix well. Bring it to a boil, turn down the heat and simmer for 15-20 minutes.
