    Avocado Tomato Pasta

    List of Ingredients




    3 large very ripe avocadoes, pitted and scooped from peel
    3 tbsp freshly squeezed lime or lemon juice
    3/4 cup finely chopped red onion
    3 cups peeled, seeded, drained and chopped ripe tomato
    2 cups chopped fresh basil
    salt and pepper
    1 lb. linguini or other pasta
    freshly grated parmesan cheese

    Recipe



    Bring water to a boil for to cook pasta.

    Mash avocado in a mixing bowl and stir in the juice, onion, tomato, chopped basil and salt and pepper. Set aside.

    Cook pasta until al dente. Drain and transfer to a bowl. Quickly stir in the reserved avocado mixture.

    Serve immediately with cheese.
