    Moroccan Spiced Red Lentil Soup

    Recipe Introduction

While looking for healthy recipes for John and I, I found this on the Food Network website. Very tasty and of course, you can add tabasco or another spicy sauce individually.

    List of Ingredients

    1 tbsp. olive oil
    2 medium onions, chopped
    4 garlic cloves, minced
4 stalks celery, sliced crosswise 1/2 inch thick
    2 tsp. salt (I didn't add)
    1 tsp. ground black pepper
    1 tsp. ground tumeric
    1 tsp. ground cumin
    1/4 tsp. ground ginger
    1 tsp. ground cinnamon
    1 bay leaf
    1 tbsp. tomato paste
1 large or 2 medium yukon gold potatoes, peeled and diced
    1 pound red lentils
1 cup cooked wheat berries (can be purchased at whole foods -- but I omitted)
6 Italian roma (plum) tomatoes, cored and diced
    1/2 bunch cilantro (for garnish)

    Recipe

Heat olive oil over medium heat. Add onions and cook for 10 minutes until softened.
Add garlic and cook one minute. Add celery for 2 minutes longer. Add pepper, 1 tsp, salt, tumeric, cumin, ginger, cinnamon, and bay leaf and cook 2 to 3 minutes.

Add tomato paste, potatoes, lentils and water and cook 45 minutes (until lentils and potatoes are tender).

Stir in remaining salt (if used), wheat berries and tomatoes and heat through. Taste and adjust seasoning. Garnish with cilantro.
