    Tortilla Breakfast Casserole

    Tortilla Breakfast Casserole

    Breakfast
    1/4 pound sausage or 5 patties
    4 eggs
    2 tomatoes
    1 8 oz. package of cream cheese
    1 jar sliced jalapeno peppers (12 oz.)
    1 jar of honey
    8 to 10 flour tortillas (8", 10" or 12")
    1 8 oz package of grated cheeses (Cheddar, Monterey Jack, Queso
    Quesadilla and Asadero)
    1 teaspoon Ground Black Pepper (use when cooking eggs)

    Cook sausage, drain, cool, then crumble or slice and reserve.

    Scramble eggs. Lightly coat a baking dish or skillet with Pam.

    Place layer of meat, eggs, tomatoes, thin sliced Cream Cheese on one
    edge of tortilla and coat with honey.

    Roll tortilla and place in dish or skillet with seam side down.

    When dish or skillet is full, garnish with sliced jalapeno peppers
    and diced tomatoes. Allow small amounts of juice from jalapenos and
    tomatoes to top tortillas for additional moisture for tortillas.
    Garnish with grated cheeses to cover.

    Cover and heat in oven at 350 degrees for 20 minutes or until cream
    cheese is melted.

    Remove and serve with salsa and honey on the side.

    These tortillas can be made the night before and/or frozen for
    future use, using only the number required.
