    Sweet and Sour Chicken Salad


    List of Ingredients


    • 2 cups cooked chicken - - diced
    • 10 strips of bacon
    • 3/4 cup granulated sugar
    • 3/4 cup cider vinegar
    • 1/4 teaspoon pepper
    • 1 teaspoon celery seed
    • 1/4 teaspoon dill seed
    • 2 tablespoons grated onion
    • 1/2 cup diced green pepper
    • 1/2 cup diced canned pimiento
    • 3 cups cooked fluffy rice
    • 3 hard-boiled eggs, shelled and sliced


    Instructions


    1. Fry the bacon until crisp and remove from skillet.
    2. To the bacon grease that has collected in the skillet, add the sugar, vinegar and pepper. Stir and cook over low heat until all of the sugar is dissolved.
    3. Add the celery seed, dill seed, onion, green pepper and pimientos.
    4. Continue to cook over low heat and stir in the chicken.
    5. When completely heated, spread the hot rice on a deep platter and pour the chicken mixture over it.
    6. Crumble up the bacon and sprinkle over the top.
    7. Arrange the egg slices around the edge of the platter.
    8. Serve at once, piping hot.
