    Honey of a Peach Grilled Chicken with Peach Jalapeno Coulis

    4 large, ripe, but firm peaches or mangoes
    1/4 cup orange juice
    2 tablespoons honey
    2 tablespoons chopped jalapeno chili
    4 tablespoons fresh lime juice
    2 tablespoons fresh chopped mint
    1 peeled garlic clove
    1 teaspoon chili powder
    1/2 teaspoon each salt and black pepper
    6 Oregon grown boneless, skinless chicken breast halves
    1/2 cup seeded English cucumber, cubed
    1 Haas ripe avocado, peeled, pit removed and cubed
    1/3 cup chopped red onion
    1/3 cup chopped red bell pepper

    Spray grill rack with non-stick cooking spray and heat the grill to medium. Peel the peaches and remove the pits. Place two peaches in a food processor along with the orange juice, honey, 1 tablespoon jalapeno, 2 tablespoons lime juice, 1 tablespoon mint and the garlic. Puree until smooth then place in a small saucepan and heat over medium for 5 minutes or until slightly thickened.
    Season both sides of the chicken with the chili powder, salt and pepper.

    Prepare peach salsa by chopping remaining peaches into 1/2 inch cubes. Place in a medium bowl along with the remaining jalapeno, lime juice, mint, cucumber, avocado, red onion and bell pepper. Stir and set aside. Place chicken on grill and cook each side 5-6 minutes until done. During the last two minutes of grilling, baste with the cooked peach coulis. Arrange chicken on a pool of the coulis and place peach salsa next to chicken.
