    2 tbsp. margarine
    1 lb. boneless skinless chicken breasts, cut into 1" pieces
    1 garlic clove, minced
    1 1/2 cups thinly sliced zucchini
    1 1/2 cups sliced fresh mushrooms
    1 can (15 oz.) tomato sauce
    1 can (14 1/2 oz. peeled whole tomatoes,
      undrained and quartered
    1 1/2 tsp. oregano
    1/2 tsp. lemon pepper
    1/8 tsp. cayenne pepper (optional)
    8 oz. capellini or vermicelli, uncooked
    1/2 cup grated Parmesan cheese

    Recipe



    Melt the margarine in a large skillet. Saute the chicken
    pieces until lightly browned. Add the garlic, zucchini,
    and mushrooms, and saute for 2 minutes. Stir in the
    remaining ingredients (except the pasta and Parmesan cheese),
    and simmer uncovered for 10 min. to blend the flavors and
    thicken the sauce.

    Meanwhile, cook the pasta according to package directions.
    Drain. Serve the hot cooked pasta with the sauce. Sprinkle
    with Parmesan cheese.
