"Jerk" is a unique Jamaican way of preserving and cooking meat. Treasured jerk recipes containing pimento (allspice), hot chilies and salt, plus up to 30 or more additional herbs and spices have been handed down through generations of Jamaican cooks.
12 Tyson® Fresh Chicken Breast Tenders
1 cup Jamaican jerk marinade
12 bamboo skewers
2 cups finely chopped fresh pineapple
1 cup finely chopped cucumber
1/4 cup chopped red onion
2 tablespoons chopped fresh cilantro
1 tablespoon rice vinegar
1. Wash hands. Place chicken in large resealable plastic bag; add marinade. Wash hands. Refrigerate chicken at least 30 minutes up to 4 hours. Soak skewers in water at least 30 minutes. Meanwhile, combine remaining ingredients in medium bowl to make salsa. Chill until serving time.
2. Preheat broiler. Wash hands. Remove chicken from bag and discard marinade. Thread chicken onto skewers. Wash hands.
3. Broil skewers 4 inches from heat, turning once, 7 to 10 minutes or until done (internal temp 170°F).
Serving Suggestion: Serve skewers with Pineapple Salsa. Refrigerate leftovers.
